2 tablespoons olive oil
1/2 green bell pepper, thinly sliced
1/2 yellow bell pepper, thinly sliced
1/2 onion, thinly sliced
1 cup cherry tomatoes, cut in half
3/4 teaspoon garlic powder
1 teaspoon salt, divided
1/2 teaspoon black pepper, divided
1 1/2 pounds cod, haddock, or tilapia
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
Directions1.Preheat oven to 350 degrees F. Coat a baking dish with cooking spray.
2.In a large skillet over medium-high heat, heat oil until hot. Add green and yellow peppers, onion, tomatoes, garlic powder, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook 10 to 15 minutes, or until vegetables are tender, stirring occasionally.
3.Place fish in baking dish, sprinkle evenly with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper, then drizzle with lemon juice. Spoon vegetables evenly over fish.
4.Bake 20 to 25 minutes, or until fish is cooked through. Sprinkle with parsley and serve immediately.
