4 pounds potatoes, peeled and cut into large chunks
1 egg, beaten
6 tablespoons butter, divided
1/4 cup milk
1 1/2 teaspoons salt
1/4 teaspoon black pepper

Place potatoes in a large pot and add just enough water to cover them. Cook over high heat until boiling, then reduce heat to medium and continue cooking 20 to 25 minutes, or until fork-tender.
Preheat oven to 350 degrees F. Coat a 2-quart casserole dish with cooking spray.
Drain potatoes and place in a large bowl. Add egg, 4 tablespoons butter, the milk, salt, and pepper; beat with an electric mixer until smooth.
Place in casserole dish, cover, and bake 20 to 25 minutes, or until warmed through.
In a small microwave-safe bowl, melt remaining 2 tablespoons butter. Drizzle over mashed potatoes and serve.
