2 tablespoons olive oil
1 onion, finely chopped
1 carrot, peeled, cut in half, and thinly sliced
1 stalk celery, chopped
4 cups chicken broth
2 (15.8-ounce) cans cannellini beans, not drained
1 pound kielbasa sausage, thinly sliced
3/4 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 teaspoon black pepper
2 cups fresh spinach
DirectionsIn a soup pot, heat oil over medium-high heat. Saute onion, carrot, and celery 6 to 8 minutes, or until tender.
Add remaining ingredients except spinach and bring to a boil. Reduce heat to low, and simmer 20 minutes. Stir in spinach and serve.
