1/2 cup (1 stick) butter
1 onion, chopped
2 stalks celery, chopped
1 carrot, finely chopped
1 (12-ounce) package cubed herb-seasoned stuffing mix
1 pound pork sausage, cooked and crumbled
1/4 teaspoon black pepper
1 1/2 cups hot chicken or turkey broth
Directions1.Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
2.In a large skillet over medium-high heat, melt butter. Add onion, celery, and carrot and cook 8 to 10 minutes, or until tender.
3.In a large bowl, combine stuffing cubes, sausage, sauteed vegetables, pepper, and broth; mix gently until thoroughly combined. Spoon stuffing into baking dish.
4.Cover and bake 40 minutes. Uncover and bake an additional 15 minutes, or until heated through.
