2 pounds ground chuck
1 1/2 cups finely crushed butter-flavored crackers
1/2 cup chopped onion
3/4 cup ketchup, divided
1/2 teaspoon salt
1/2 teaspoon black pepper
3 slices bacon
1 tablespoon prepared yellow mustard
2 tablespoons brown sugar
Directions1.Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray.
2.In a large bowl, combine beef, cracker crumbs, onion, 1/2 cup ketchup, the eggs, salt, and pepper; mix well. Form meat mixture into a loaf on baking sheet. Lay bacon over top of meatloaf.
3.Bake 1 hour.
4.Meanwhile, in a small bowl, combine mustard, brown sugar, and remaining 1/4 cup ketchup; mix well. Spread evenly over top of meatloaf. Return to oven and bake 15 more minutes, or until no longer pink in center.
