Green Chile Stew

Green Chile Stew

1/2 green pepper, diced
1/2 red pepper, diced
1/2 onion, diced

Saute in olive oil until translucent

Add:
4 cups chicken stock
2/3 cup green chiles (small can)
2 cups potatoes (cooked & diced)
1 tsp. cumin
3/4 cup pork or chicken, cooked & diced
1/2 tsp. seasoned pepper

Simmer for 10 minutes.
Add salt & pepper to taste.

Mix 1 1/2 T. corn starch with a little cold water to thicken the stew.
