Fat Tuesday Fudge2 cups sugar Combine sugar, syrup, sour cream, butter and salt in a medium saucepan. Bring slowly to boil over medium heat while stirring. Cover and let gently boil for three minutes (allows sugar to melt off sides of pan). Uncover and continue boiling slowly until mixture reaches "soft ball stage" on a candy thermometer (approx. 236 degrees). Do not stir. Remove from heat and let stand for 15 minutes. Mix in extracts, cherries and pecans and stir for 150 strokes. Turn into 8 x 8 pan and let cool slightly, and then top with mini morsels. Let cool completely. By Chef John Sanders Most Popular |
