Mini Lime Cheesecakes

60 phyllo cups
16 oz cream cheese
1 cup superfine sugar
6 oz white chocolate squares
1 envelope unflavored gelatin
1/4 cup fresh lime juice
2 tsp lime zest
1 cup whipping cream, whipped
15 strawberries

Heat lime juice and sprinkle gelatin over the juice and let stand for
5 minutes. Melt white chocolate and set aside. Beat cream cheese and sugar. Mix in lime juice. Fold in melted white chocolate and lime zest. Fold in whipped cream. Spoon into a pastry bag and pipe into phyllo cups. Destem and Quarter fresh strawberries. Place strawberry on top of filling. Chill for 30 minutes and serve.
