Grilled Squash

Salsa Ranch Sauce

1 cup ranch dressing
3 or 4 T Salsa
-Blend together

Batter

½ cup Water
½ cup Cream
1 ea Egg, beaten
1 cup Flour

3 med Zucchini (¼” slices, lengthwise)
Sea salt
4 cups Canola oil (heated to 360º for frying)

Slice zucchini. Salt and let rest for 10 minutes. This will leach some of the liquid. Prepare batter and let sit for 1 hour. Dredge squash in batter and drop in oil. Fry crisp, drain on paper towel and serve with sauce.
