1 pound skinless chicken breast Sprinkle chicken with Cajun seasoning. Blacken, charbroil, bake, or sauté chicken. Cool completely and cut into 1 inch cubes. Also, if you have never tried that seasoning before, 3 tbsp isn't all that much. It is a relativly sweet cajun spice, but it is always a good idea to start with less. Everyone has different tastes, some may like this a little hotter than others.
