Granola Yogurt Fruit Parfait
Cinnamon Walnut Granola
Serves 25 • 1/2C
Ingredients:
9 cups old fashioned oatmeal
2 cup walnuts, chopped
1/2 cup coconut
1/2 cup brown sugar
1/2 cup canola oil
1/2 cup honey
2 Tbsp cinnamon
1 Tbsp vanilla
3/4 cup ground flaxseed
Recipe Directions:
1. Combine oats, coconut, nuts, and ground flax seed in large bowl.
2. In microwave heat brown sugar, oil, honey, cinnamon and vanilla until bubbling.
3. Pour over oat mixture and mix well.
4. Thinly spread on baking sheet. Bake at 300 degrees for 15 minutes. Stir. Return to oven for additional 15 minutes or until oats are toasted. Stir well to break up.
5. Cool thoroughly. Store in airtight container.
NOTES: May add craisins, dates, raisins, etc to this recipe.

Layer Lowfat Vanilla Yogurt with Granola and fruit. (if not fresh buy frozen no sugar added mix of berries)
