Hy-Vee Simply Seafood: Baked Tilapia, Caribbean Blend and Parmesan Rice

Panko Baked Tilapia

1½ Cups Panko Bread Crumbs
1T Cajun Seasoning
1t Dried Parsley
2 Eggs
4 Tilapia Filets

Mix bread crumbs and seasonings; set aside. Pre-heat oven to 425 degrees. Beat eggs, dip tilapia filets in egg wash and then coat both sides with panko bread crumbs. Bake for 10 minutes.


Grand Selections Caribbean Blend

3C Vegetables
2T Butter
1T Italian Seasoning

Place in microwave-safe bowl and add ¼ cup of water. Microwave on high for 5-6 minutes, stir.


Parmesan Rice

2C Chicken Stock
1C Chopped Fresh Spinach
1T Olive oil
1T Italian Seasoning
1C Long Grain Rice
½C Parmesan Cheese

Bring stock, spinach, olive oil and seasoning to a boil. Add rice, stir and cover with lid. Simmer for 20 minutes. Add cheese. Stir and serve.
