Panko Baked Tilapia
1½ Cups Panko Bread Crumbs1T Cajun Seasoning1t Dried Parsley2 Eggs4 Tilapia Filets
Mix bread crumbs and seasonings; set aside. Pre-heat oven to 425 degrees. Beat eggs, dip tilapia filets in egg wash and then coat both sides with panko bread crumbs. Bake for 10 minutes.

Place in microwave-safe bowl and add ¼ cup of water. Microwave on high for 5-6 minutes, stir.

2C Chicken Stock1C Chopped Fresh Spinach1T Olive oil1T Italian Seasoning1C Long Grain Rice½C Parmesan Cheese
Bring stock, spinach, olive oil and seasoning to a boil. Add rice, stir and cover with lid. Simmer for 20 minutes. Add cheese. Stir and serve.
