Hy-Vee Simply Seafood: Parmesan Crusted Atlantic Cod with Balsamic Mixed Greens

Parmesan Crusted Atlantic Cod with Balsamic Mixed Greens and Smashed Potatoes

2 lb Fresh Alaskan Cod
2 lb Red Potatoes, Washed and Quartered
1C Half and Half
2t Garlic Powder
2T Butter
Salt and Pepper to Taste
1pkg. Mixed Green Salad, Washed

BREADING

2 Eggs, Blended
1C Panko Bread Crumbs
1C Parmesan Cheese, Grated
2T Fresh Basil, Chopped
2T Fresh Parsley, Chopped

DRESSING

2T Balsamic Vinegar
1t Dijon Mustard
1/4C Hy-Vee Olive Oil
Sea Salt and Black Pepper to Taste

Bring 2 quarts of water to a boil. Cook potatoes until tender and drain. Add half & half and mash with a potato masher. Stir in garlic powder and season with salt & pepper. Set aside and keep warm. Mix breading ingredients together. Preheat oven to 350 degrees. Dip the filets into the egg and cover with breading. Place in an oven-safe dish and bake for 20 minutes (until golden brown and flakes apart). Whisk together balsamic, dijon and olive oil, season with salt & pepper to taste. Poor over mixed greens and lightly toss to coat.
