2T Balsamic Vinegar1t Dijon Mustard1/4C Hy-Vee Olive OilSea Salt and Black Pepper to Taste
Bring 2 quarts of water to a boil. Cook potatoes until tender and drain. Add half & half and mash with a potato masher. Stir in garlic powder and season with salt & pepper. Set aside and keep warm. Mix breading ingredients together. Preheat oven to 350 degrees. Dip the filets into the egg and cover with breading. Place in an oven-safe dish and bake for 20 minutes (until golden brown and flakes apart). Whisk together balsamic, dijon and olive oil, season with salt & pepper to taste. Poor over mixed greens and lightly toss to coat.
