Asian Atlantic Salmon with Grilled Asparagus and Rice Noodles
4 5oz. Atlantic Salmon Portions1 lb Fresh Asparagus, Washed and Trimmed1T Extra Virgin Olive Oil1pkg Thai Rice NoodlesSea Salt and Black Pepper to Taste
Marinade
1/4C Kikkoman Less Sodium Soy Sauce1/4C Extra Virgin Olive Oil1t Garlic, Minced2T Hy-Vee Dijon Mustard1T Fresh Cilantro, Chopped1t Thai Red Curry Paste2T Green Onions, Chopped1T Fresh Lime Juice
In a small bowl, whisk together marinade ingredients and pour half of the mixture over the salmon filets. Place in the refrigerator for 10 to 15 minutes until flavors come together. Toss asparagus with olive oil and season with salt and pepper. Cook pasta according to package instructions and toss with remaining sauce. Preheat grill on medium high heat. Place the asparagus on top grill rack, cook until slightly tender. Remove salmon from marinade and grill each side for 2 minutes. Pile pasta in bowls, top with asparagus and grilled salmon. Garnish with more cilantro and green onions around the bowl.
