Rachel Do My Job: Bartending at ICON Lounge

When you're watching Tom Cruise working some fancy bar flare to classic 80's hits in the movie "Cocktail," you kind of want to bartend right a long with him.

However, I've learned it isn't as easy as Tom Cruise makes it look. Glenn Stallings doesn't work at Cocktails and Dreams with Mr. Cruise but he does run the ICON Lounge in Sioux Falls. He says bartending is a job that will constantly keep you moving. Glenn also travels around the country to different flare competitions. So I got a great teacher to try to learn how to bartend.

Realizing there was no way I was going to be able to master a full bar menu, we started with the basics. I learned how to pour 1&1s, which are 1 part booze, 1 part mixer. Glenn also taught me the different counts to pour and shake a proper martini. He also told me it's important to shake your cocktail away from guests just in case the top of the shaker were to come flying off.

ICON also offers a lot of specialty drinks, so Glenn took me through the steps to learning their spin on a classic old fashioned. This cocktail includes smoking a glass on a cedar plank. To my delight this involves torching the cedar plank with a blowtorch.

I also learned the 2-step process to pouring a proper Guinness and making a black and tan. With a crash course in bartending complete I got ready for the big Friday night behind the bar.

I'll admit the night started a little rough. I wasn't sure which way to go, or how to ring in sales. It was also hard to track down all the different things I needed for different cocktails. You quickly realize a lot of bartending is keeping people happy, which means a lot of small talk.

All in all the bartending wasn't a total flop. I hung in there and did the best I could not to knock anything over. I can tell you there are some fantastic cocktails to try at ICON Lounge, and they are probably even better when I'm not making them.
