SNAP recipient speaks out

Around 100,000 South Dakotans receive SNAP benefits -- money meant to supplement a person's food budget.

But for some, it's their only money for food.

38-year-old Gina Corbin has been wheelchair bound since 1996.

Since she is unable to work, she relies on the around $170 a month she receives in SNAP benefits to put food on the table. But she says it isn't enough.

"So this is lunch today. I can live out of the casserole for probably two, three, four days," said Corbin.

It's been just over a week since SNAP benefits were issued on the 9th at midnight, so Corbin's kitchen is still relatively well-stocked.

 

"I would say by mid to end of month, I'm almost empty and then I worry where am I going to get my next meal at," said Corbin.

She says food insecurity doesn't discriminate.

" It's not just disabled folks -- it's all walks of life from the homeless to the working people working, still aren't making it," said Corbin.

Corbin says she likes to eat healthy but it's hard to afford it on her SNAP benefits. And since the cuts back in November, she has $11 a month less to spend.

"We can't eat as healthy. The junk food, the pizza rolls and Totinos pizzas, lunchables, and those things cost a lot less. I love fresh fruits and vegetables but it is too expensive," said Corbin. 

When times get tough, Corbin says you have to do what you can to get by.

"We go where we have to go - the food pantry and everything -  to get help. It's hard to make it on what we receive every month," said Corbin.

Yesterday wrapped up the last day of the two-week SNAP Challenge for me. Even with careful planning, I still found it tough to eat healthy meals.

I did use some shortcuts, however. Because fresh veggies were too expensive, I opted to buy frozen veggies which saved me a lot of money.
