3 cucumbers, peeled and thinly sliced
1 tablespoon salt
3 cups ice water
4 scallions, thinly sliced
1/2 small red bell pepper, chopped
1/3 cup sour cream
2 tablespoons apple cider vinegar
3 tablespoons sugar
1/4 teaspoon black pepper
Directions1. In a large bowl, combine cucumbers, salt, and ice water. Cover and chill 1 hour, then drain and return cucumbers to the bowl.
2. Add remaining ingredients and mix until well combined. Cover and chill at least 2 hours before serving.
